Ingredients

Burgers

  • 4 turkey burgers
  • 4 burger buns
  • Lettuce
  • Tomato, sliced
  • Red onion, sliced
  • Cheese slices, optional
  • Burger sauce, mayo, or ketchup

Mediterranean Vegetables

  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 1 courgette, chopped
  • 1 red onion, cut into wedges
  • Cherry tomatoes
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper

Rice

  • 300g basmati or long-grain rice
  • 600ml water
  • Pinch of salt

Method

  1. Heat the oven to 200C.
  2. Put the peppers, courgette, red onion, and cherry tomatoes on a baking tray. Toss with olive oil, oregano, salt, and pepper.
  3. Roast the vegetables for 20-25 minutes, turning once, until soft and lightly browned.
  4. Rinse the rice, then add it to a saucepan with the water and a pinch of salt. Bring to the boil, cover, reduce the heat, and simmer for 10-12 minutes. Turn off the heat and leave covered for 5 minutes.
  5. Cook the turkey burgers in a frying pan, grill, or oven according to the packet instructions, until cooked through.
  6. Toast the buns if you like, then build the burgers with lettuce, tomato, red onion, cheese, and sauce.
  7. Fluff the rice with a fork and serve with the roasted vegetables and burgers.

Notes

  • Add feta, olives, or a squeeze of lemon to the vegetables if you want a brighter Mediterranean-style side.
  • Check the turkey burgers are cooked through before serving.
