Ingredients
Burgers
- 4 turkey burgers
- 4 burger buns
- Lettuce
- Tomato, sliced
- Red onion, sliced
- Cheese slices, optional
- Burger sauce, mayo, or ketchup
Mediterranean Vegetables
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 1 courgette, chopped
- 1 red onion, cut into wedges
- Cherry tomatoes
- 1 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper
Rice
- 300g basmati or long-grain rice
- 600ml water
- Pinch of salt
Method
- Heat the oven to 200C.
- Put the peppers, courgette, red onion, and cherry tomatoes on a baking tray. Toss with olive oil, oregano, salt, and pepper.
- Roast the vegetables for 20-25 minutes, turning once, until soft and lightly browned.
- Rinse the rice, then add it to a saucepan with the water and a pinch of salt. Bring to the boil, cover, reduce the heat, and simmer for 10-12 minutes. Turn off the heat and leave covered for 5 minutes.
- Cook the turkey burgers in a frying pan, grill, or oven according to the packet instructions, until cooked through.
- Toast the buns if you like, then build the burgers with lettuce, tomato, red onion, cheese, and sauce.
- Fluff the rice with a fork and serve with the roasted vegetables and burgers.
Notes
- Add feta, olives, or a squeeze of lemon to the vegetables if you want a brighter Mediterranean-style side.
- Check the turkey burgers are cooked through before serving.
