Ingredients
- 300–350g lean beef mince
- 150g basmati or jasmine rice (dry weight)
- 1 small red pepper, diced
- 2 spring onions, sliced
- 1 garlic clove, minced
- 1 tsp grated ginger (optional)
- 1 tbsp soy sauce
- 1½ tbsp honey
- 1–2 tsp hot sauce or sriracha, depending on how spicy you like it
- 1 tsp sesame oil
- ½ tsp smoked paprika
- ½ tsp chilli flakes (optional)
- 1 tsp sesame seeds
- 1 tbsp oil for cooking
Method
- Cook the rice according to the packet instructions.
- Make the hot honey sauce: mix the honey, soy sauce, hot sauce or sriracha, and sesame oil in a small bowl.
- Heat the oil in a large frying pan over medium-high heat. Add the beef mince and really brown it, breaking it up as it cooks. Let it get slightly crispy rather than steaming.
- Add the pepper, garlic, and ginger. Cook for another 3–4 minutes until the pepper softens.
- Add the smoked paprika and chilli flakes, then pour in the hot honey mixture. Stir everything together and cook for 2–3 minutes, until the beef is glossy and the sauce has reduced and coated it.
- Serve over rice and top with spring onion and sesame seeds.
