Honey Soy Salmon Rice Bowls

Sticky salmon, crunchy veg, and warm rice. Feels a bit special while still being straightforward enough for a weeknight.

Ingredients

  • 4 salmon fillets
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp sesame oil
  • 250g rice
  • 1 cucumber, sliced
  • 2 carrots, grated
  • 1 avocado, sliced
  • 2 spring onions, sliced
  • Sesame seeds, to serve

Method

  1. Mix the soy sauce, honey, lime juice, and sesame oil. Coat the salmon and leave it while the rice cooks.
  2. Cook the rice according to the packet instructions.
  3. Roast or air-fry the salmon at 200C for 10 to 12 minutes until just cooked and lightly glazed.
  4. Divide the rice between bowls and add cucumber, carrot, avocado, and spring onions.
  5. Flake over the salmon and spoon over any tray juices. Finish with sesame seeds.

Notes

  • Add edamame or steamed broccoli if you want more greens.
  • Works well with leftover cooked rice for an even faster version.
