Ingredients
- 4 salmon fillets
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp lime juice
- 1 tsp sesame oil
- 250g rice
- 1 cucumber, sliced
- 2 carrots, grated
- 1 avocado, sliced
- 2 spring onions, sliced
- Sesame seeds, to serve
Method
- Mix the soy sauce, honey, lime juice, and sesame oil. Coat the salmon and leave it while the rice cooks.
- Cook the rice according to the packet instructions.
- Roast or air-fry the salmon at 200C for 10 to 12 minutes until just cooked and lightly glazed.
- Divide the rice between bowls and add cucumber, carrot, avocado, and spring onions.
- Flake over the salmon and spoon over any tray juices. Finish with sesame seeds.
Notes
- Add edamame or steamed broccoli if you want more greens.
- Works well with leftover cooked rice for an even faster version.
