Ingredients
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp tomato puree
- 1 x 400g tin chopped tomatoes
- 150ml cream
- 500g fresh tortellini
- 60g parmesan, grated
- Handful of basil or spinach
- Salt and black pepper
Method
- Heat the oil in a saucepan and cook the garlic for 30 seconds.
- Stir in the tomato puree, then add the chopped tomatoes and simmer for 8 minutes.
- Pour in the cream and season with salt and pepper.
- Add the tortellini to the sauce and cook according to the pack, usually 3 to 4 minutes.
- Stir through the parmesan and basil or spinach, then serve straight away.
Notes
- Add cooked chicken or sausage if you want to make it heartier.
